Apple and Raisin Oven Pancake


  • 1 large baking apple, cored and thinly sliced
  • ½ cup raisins
  • 2T heaping coconut sugar
  • 1/2t ground cinnamon
  • 4 eggs
  • 2/3 cup milk
  • 2/3 cup gluten free all-purpose flour blend
  • 2T coconut oil
  • Powdered sugar (optional)



  1. preheat oven to 350.Spray 9 inch pie plate with nonstick cooking spray
  1. combine apple, raisins, brown sugar and cinnamon in medium bowl.Transfer to prepared pie plate.  Bake, uncovered 10-15 minutes or until apple begins to soften.  Remove from oven, increase oven temperature to 450 deg.
  1. Whisk egs, milk, flour blend and coconut oil in a bow until blended.Pour batter over apple mixture.  Bake 15 minutes or until pancake is golden brown.  Sprinkle with powdered sugar if desired. Add a little maple syrup if desired.
