Banana Bread

I love banana bread – and what a great way to use those bananas that have gotten away from you.

 

BANANA BREAD 

Sugar, diary, and gluten free, and yummy!

5 dates

5T hot water (blend to paste)

Soak the dates in 5T hot water for 10 minutes.  After soaking, put dates into a food processor and process into a paste.

Then….Mix together:

1 1/2C almond flour

1/4C coconut flour

1/4C flax meal

1t soda

1t baking powder

1/2t salt

2t cinnamon

(walnuts, coconut, raisins, to make 2 cups)

Mix together wet ingredients:

2T melted coconut oil

1T vanilla

4 eggs

4 ripe bananas mashed

Add to dates paste

 

Add wet mixture and mashed bananas to dry mixture and mix.

Pour into 2 parchment lined loaf pans

Bake 350 for 35-40 min
