Easy Health Giving Minestrone


  • 2T olive oil
  • 1C chopped white onion
  • 1C chopped red onion
  • 3-4 garlic cloves chopped
  • 1C carrots
  • 1C celery
  • 1C peas
  • 1C green beans
  • 1C white beans (northern or cannellini)
  • 2C diced organic tomatoes
  • 1 carton organic broth (vegetable or beef)
  • 3-4C water
  • 2T ground black pepper
  • Dirty Salt to taste
  • 1-2T organic Italian spice mix (oregano, thyme, basil, etc.)
  • Add seasoning to taste
  • 2C chopped greens (kale, collard greens, Swiss chard)



Add oil to soup pot – heat oil.  Add in onions and sauté until soft and slightly translucent.  Add garlic, sauté about 1 minute to heat.  Add in vegetables, and sauté 2-3 minutes.  Add in organic broth and water, and seasonings to taste.  Simmer 20-25 minutes.  At the very end, add in greens to wilt.

Serve hot!

Note:  you can add any vegetables you want that are organic:  asparagus, Brussel sprouts, lima beans).  The more vegetables the more nutrients!

Note:  you may add meat sparingly – recommend grass fed ground beef or organic ground turkey.  Cook the meat in a separate pan and add when completely cooked.
