Add oil to soup pot – heat oil. Add in onions and sauté until soft and slightly translucent. Add garlic, sauté about 1 minute to heat. Add in vegetables, and sauté 2-3 minutes. Add in organic broth and water, and seasonings to taste. Simmer 20-25 minutes. At the very end, add in greens to wilt.
Note: you can add any vegetables you want that are organic: asparagus, Brussel sprouts, lima beans). The more vegetables the more nutrients!
Note: you may add meat sparingly – recommend grass fed ground beef or organic ground turkey. Cook the meat in a separate pan and add when completely cooked.
